I basically took my traditional chicken enchilada recipe , modified it and added some black beans, corn and chicken broth. After a few hours of letting it slow cook all day, this delicious bowl of soup emerged which I topped with cheese, scallions, cilantro and a dallop of sour cream. Avocado would also be awesome. This was very tasty, filling and had just the right amount of heat. Add more or less chipotle to your taste.

Even my 15 month old loved it.
But now I have a whole can left and I don't know what to do with the rest of it. Made it last night in my Instant Pot. You still can. He will have to have the cheese and sour cream in it though.

I had trouble getting the cream cheese to completely melt. This is the perfect easy weeknight meal, because you can throw everything in your slow cooker in the morning or afternoon and in the evening you have a delicious dish ready for you to eat. Thanks Gina!!? I made it in the crockpot and also did it in the Instant Pot and I found that the chicken was more moist doing it as slow cooker just as a heads up for people who enchilava that. The perfect amount of spice. This soup has all the flavors of chicken enchiladas with a fraction of the prep time!
